Universidad Nacional de Cuyo Mendoza, largest university of higher education, was established in 1939 by presidential decree 26971. Balseiro Institute, is located in the city of San Carlos de Bariloche, is the most developed institute of Physics research in Argentina. At the university foundation, few existing colleges and some new colleges were incorporated into it. University established regional affiliations in Engineering and Architecture in San Juan, Medicine, Human Sciences,
Agronomy and
Economics in Mendoza, and Natural Sciences in San Luis. In 1973, the National University of Cuyo concentrated itself in Mendoza and on campus in Río Negro Province: the Balseiro Institute because of National University of San Juan and the National University of San Luis those were established in these regions from the adjunct faculties of the National University of Cuyo.

Jorge Barón is the vice rector of the university. UNCuyos students recently conducted research and discovered methods of cutting and preparing food can affect many nutrients retained in a meal. Thiosulfinates in
garlic and onions do not show its effect of platelet aggregation and microparticle shedding until crushing or cutting. In their research they also found that steaming instead boiling is preferable to retain more of their water-soluble vitamins.
