Biography

He holds a degree in Pharmacy from the Federal University of Minas Gerais (1997) and a Master's Degree in Food Science from the Federal University of Minas Gerais (2000). PhD in Food Science at the Faculty of Pharmacy, UFMG. Adjunct Professor II, Department of Food, Faculty of Pharmacy, UFMG. He has experience in the area of ​​nutrient analysis, study and application of food waste, product development from waste, functional and special purpose foods.
