Study of the nutritive value of starch grains: analysis of the chemical composition of the present components (reserve and biochemical active proteins, amino acid composition); analysis of carbohydrates, dietary fibers (β-glucan and cellulose); analysis of antioxidants - phytic acid, chlorophyll, carretoid, and others. Identification of specific proteins responsible for resistance to stress factors.
