Graduated in Chemical Engineering from the Federal University of Minas Gerais (1983), master's degree in Food Science and Technology, Federal University of Viçosa (1988) and PhD in Food Technology from the University of Campinas (2001). He is currently associate professor III at the Federal University of Minas Gerais. He has experience in the field of Food Science and Technology, with an emphasis on biotechnology applied to the production of food and beverages, mainly in the following research areas : probiotic milk drinks, probiotic encapsulation, alcoholic fruit fermented, isolation and selection of producing microorganisms Of enzymes.
