Biography

Anderson Junger Teodoro holds a degree in Nutrition from the Federal University of the State of Rio de Janeiro and a Master's and PhD in the area of ​​Food Sciences from the Federal University of Rio de Janeiro. He is currently an Adjunct Professor of the Department of Food Science at the School of Nutrition and Director of Research at UNIRIO, as well as a Young Scientist from Our State by FAPERJ, where he works in scientific research and undergraduate and postgraduate teaching. In the research, has been dedicated to the area of ​​Food Science and Technology, with emphasis on the composition and physical-chemical quality of food, its bio-utilization and bioactivity in in vivo and in vitro models, integrating physical-chemical knowledge to human metabolism of different components present in food.
